The wines of Baron Philippe de Rothschild, s.a., a familyfirm, presided over today by Baroness Philippine de Rothschild, are as much amatter of art as of technical expertise. Combining traditional know-how withexperienced personnel and the most modern technology, Baron Philippe deRothschild, with skill and dedication,transforms the gifts of nature, intoworks of art and sources of pleasure. The grapes or wines are selected andbought from growers who, over the years, have become true partners, and thenvinified, blended and matured by the company’s oenologists at ourSaint-Laurent-Médoc winery.
ORIGIN
The vineyards, mostly from the south of the area aroundlimoux, are chosen according to three criteria: the climate and exposure, thesoil and the grape varieties grown in them. a hot and dry mediterranean climatewith little rainfall encourages the grapes to reach full maturity, suitable formaking full-flavoured, elegant and powerful wines.
TERROIR
Three types of soil have been selected for their highlyspecific characteristics: schist, an old, sedimentary rock, which takes theform of horizontal or vertical flakes and produces poor, arid soil. in such aharsh environment the vines have to find their resources at depth, enhancingthe natural expression and refinement of the grapes; pebbles which, in thefierce sunlight of the mediterranean climate, reflect the sun's rays onto thegrapes, creating a constant halo of heat. this type of soil, unique inlanguedoc, gives powerful wines of great complexity; stony clay-limestone,which stores up substantial reserves of water, helping the vines to preservetheir roots and withstand the high temperatures. rich in organic material, itgives lusher, denser, fuller wines.
VARIETIES
Carabas is a blend of mediterranean and bordeaux grapevarieties, giving the wine a unique style.
50% Syrah. extensively planted in the south of france,syrah grapes offer a wide variety of aromatic characteristics according to thesoil in which they are planted. they produce rich, powerful and tannic wineswith black and red fruit flavours, especially cherry, and spicy, saffronnotes.
25% Grenache. the typical languedoc roussillon variety,grenache is both vigorous and very drought-resistant. in a hot climate, thegrapes mature quickly and display excellent concentration of sugar and flavour,producing rich, fresh and fruity wines of great refinement.
10% Mouvedre. grown extensively in pays d'oc, this slow-and late-ripening variety particularly appreciates hot and sunny climates.mourvedre produces concentrated, tannic and long-lived wines.
15% Cabernet Sauvignon. A classic bordeaux variety,flourishes in the sunny climate and varied soils of the languedoc roussillonregion. as well as giving the wine structure and roundness, it brings a widespectrum of fruit flavours (raspberry, blackcurrant) and floral notes (violet),with a mineral touch.
VINIFICATION
The entire vinification process is designed to favourextraction of the fruit. it begins with pre-fermentation maceration whichbrings out the fresh fruit qualities. alcoholic fermentation at controlledtemperatures is followed by post-fermentation maceration and malolacticfermentation which helps to preserve the freshness and reveal theflavours.
MATURATION
Carabas rouge is matured for six to eight months at oursaint-laurent-médoc winery. our winemakers carry out daily controls to ensurethe wine is bottled when the fruit is at its peak, preserving all itsfreshness.
TASTING NOTES
The wine has a very deep violet colour, shading to black,and a rich, intense nose that displays powerful black, red and preserved fruitaromas with touches of gentle and peppery spice. expansive and richlyflavoured, the palate reveals all the refinement and fruit of this full-bodiedand harmonious wine, with flavours that extend into a lingering finish.
